Cromesquis of pig’s foot around the mushroom, velvety ceps, sheep’s foot.

 

Half-cooked salmon with braised endive with honey, cauliflower pulp with almonds, spinach emulsion.

 

Poultry in two courses « the supreme smoked and thigh frayed », the potato confit butter, condiments, pulp small chestnuts.

 

The return of the catch of the day, leek spaghetti, grapefruit segment, mini carrot, lemon emulsion. (The fish of the day will be announced when you order)

Two-course scallop tartare with herring caviar, wasabi sesame, lemongrass broth, snacked scallops and butternut squash.

 

Pan-fried duck foie gras with sausage of  Vire, pulp and parsnip chips, cider reduction. 

 

Veal tenderloin, sweetbreads with licorice, salsify and chanterelles.

 

The monkfish cooks low temperature, risotto with turmeric and mussels, Iberian chorizo, emulsion of shells.
